This is such a great healthy snack that can be a filling breakfast, or even dessert. It’s also packed with nutrition – antioxidants, fiber, protein, omega-3 fatty acids, and more. Cheese Substitute: Cashew Cheese!

I’m a huge fan of this cheese, and always have some in my fridge. It works well as a dip (especially with some seasoning mixed in), or put right on noodles to make some mac and cheese. You can also make it extra creamy with more water and add some garlic and you have a nice creamy aioli. I clearly need to stop cooking so late at night, or learn to take pictures during the day, but don’t let the bad food photography get in the way of trying this amazing cheese! Continue reading

Pickled Onion and Avocado Tilapia with Cauliflower Rice


This recipe was inspired by some fish taco recipes I’ve seen only I was out of corn tortillas so I decided to try it plated.  It turned out amazing. I was debating if the cauliflower rice needed more salt when I turned to my fiance to ask, he had completely finished his portion lol. I love the flavor of the onions with the fish, it adds a great sweetness which is complimented by the creaminess of the avocado. Continue reading
